Extra firm tofu
Flour (I used gf King Arthur measure for measure)
Milk( I used coconut)
Panko crumbs (I used gf)

DIRECTIONS
Squeeze out tofu and slice. Sprinkle salt and pepper. Dip in flour then milk then crumbs then sauté on both sides in some oil.

I placed the peanut butter and banana in center and rolled as usual for a wrap and cooked briefly till toasted. This was a gf wrap and it is great!

1 can progresso New England clam chowder
1 cup milk
2 cloves garlic
1/3 to 1/2 cup Parmesan
Blend the above sauce ingredients in food processor or blender and place in a pot to heat.
Optional Additions to sauce after blending the above sauce ingredients: parsley, green onions, peas, chicken or shrimp.

1 box zatarains yellow rice

1 package frozen Asian vegetables (I use microwave Birds Eye)

Directions
Cook rice according to directions. Meanwhile sauté bok choy in a bit of sesame oil/-cooking the white part first then when crisp tender add the green part for a few minutes with some garlic— about a large clove.
Cook your frozen Asian veggies in microwave.. Mix veggies, bok choy, drained canned chicken, and rice together.
Makes 3 good sized servings.
Grease a 9” loaf pan and preheat oven to 350 F
I just threw everything in my food processor except for the chips. Blended well. Pour in pan and mix chips in with silicone spatula gently. Cook for 38-42 minutes or until center is toothpick clean.
Cool at least 10 minutes before cutting. Nice topped with chocolate syrup when serving 🤓
2 pound pork tenderloin
1/4 cup soy sauce ( low salt is best)
1 T yellow mustard ( used a kind with the grains- nice)
2-3 T maple syrup
2 T olive oil
1 T diced dried onions
1 1/2 t. garlic powder.
Mix above ingredients. Pour over tenderloin in the crock pot. Cook on low for 6 hours.
Note: for a one pound roast it took about 2 and a 1/2 hour on low to reach 160f. Let cool 10 minutes before cutting,
I used gf quick oats I used a cup of oats and a cup of water and a pinch or so of salt.I did add a small handful more of the oats after mixing, batter should be pourable not too thin or thick. This made about 3 wraps, each about 6” or so in diameter.
Ingredients: take equal amounts of oats and water and let them soak 15 minutes or possibly 30 for old fashioned oats. Add some salt— pinch or two —Blend in food processor after soaking. Let rest a minute or so as it will thicken some.. If batter is not quite thick enough add bit more oats. Blend.
Cook as you do pancakes- about 3 minutes on each side.

3 tablespoons blanched almond flour
1/2 tablespoon coconut flour
1 tablespoon butter unsalted
1 large egg

Directions use flat bottom mug- about 4”

Melt butter in mug 30 seconds in microwave
Add rest of ingredients mixing well. Let sit one minute.
Microwave 90 seconds— I did 98 seconds in my 900 watt microwave.

1/2 Banana

1 Tbs Peanut Butter

Mix in food processor place in a two cup baking dish and bake at 350 F for 15-18 minutes until testing done with toothpick.

Blend in food processor. Make 3 pancakes in large nonstick pan ( a use a tad of butter). Cook on 6-7 level on my big burner. Cook as usual and flip when one side is done. Note- I used a fairly good sized banana.

1 extra large cucumber cut as small as chickpeas
1/2 of cabbage (I used red) chopped small
2 cans chickpeas drained
1/3 cup fresh herbs like mint and cilantro
Can add roasted nuts such as sunflower seeds
Chopped dill pickles also good and chopped purple onions
Dressing
1/3 cup olive oil
1/4 cup white rice vinegar or red wine vinegar
1 tablespoon tamari or soy sauce
2 cloves minced garlic
1 teaspoon Dijon mustard
Juice of a lemon if desired
Salt and pepper if desired
Date Nut Bread (my mother’s) . Note for GF used King Arthur measure for measure gf flour. I did add 3/4 teaspoon of xanthan gum which might not have been needed, It cooked in 60 minutes in my regular oven,

1 cup sugar
1 tsp. salt
1 Tablespoon melted Crisco or butter
1.5 cups shifted flour ( see above for gf)
1 tsp. baking soda
1 tsp. vanilla
1 cup diced dates pitted
soak in 1 cup of boiling water for 20 minutes
1 cup chopped walnuts or pecans
Beat egg, add sugar, salt and melted Crisco or butter. Mix well.
Sift flour and baking soda into egg mixture, mix untill clumpy and mixed well then add dates and liquid (the 1 cup of previously boiling water already in dates). Add the nuts and vanilla and mix well.
Pour into a buttered and floured bread pan and cook at 325 for 60 minutes in a convection oven or 75 minutes in normal oven.
Note- 60 minutes in my oven- if gets too brown can cover loosely with foil.
Let it cool 45 minutes. It should freely dump out of the bread pan.( Note: I cooled 10 or 15 minutes on a rack and then removed it from pan after loosing edges. Then I let it cool before slicing.)
Slice and spread with butter and eat!
1 pound ground beef or gardein plant based ground be’f
1 and 1/2 jar of spaghetti sauce ( used Lidl marinara)
8 ounces cream cheese , softened
1/4 cup sour cream
1 cup cottage cheese
1 stick butter( I used only about 1/3 of a stick)
1 package of gf brown rice spaghetti noodles by Tinkyada or regular spaghetti noodles
Grated cheddar cheese
Directions
Preheat oven 350F
Cook noodles
Meanwhile brown ground beef if using, drain add to spaghetti sauce and heat through OR if using gardein then add the frozen crumbles to hot sauce heating through until warm.
Meanwhile blend softened cream cheese, sour cream, cottage cheese
Take a 13 by 9 pan dotting butter on bottom of pan. Add 1/2 noodles topping with cream cheese mixture. Add rest of noodles dotting with butter and topping with meat sauce. Spread evenly.
Bake for 30 minutes. Top with cheddar cheese( grated) and cook 15 more minutes or until slightly browning cheese.
Take out of oven snd let cool a bit before serving.

1 tablespoon water or milk
1 and 1/2 teaspoons vanilla
1/4 teaspoon salt
1/2 teaspoon xanthan gum

DIRECTIONS
Cream sugar and butter in large bowl.
Add egg, milk, vanilla, salt. Mix well.
Add the xanthan gum and flour. Mix on low speed till well blended.
Cover and refrigerate for one hour.
Heat oven to 350F.
Line baking sheets with parchment or silicone sheets.
Roll dough out in batches between two parchment sheets. Roll about 1/4 inch thick and cut into shapes.
Bake 10-12 minutes depending on your thickness of cookies and your type of cookie sheet. Mine took more like 13 minutes—some a bit less. I took them out when the bottoms of cookies just started to get a bit light brown or tinted.
Cool for a few minutes and remove from pans and place on racks to fully cool.
Frost if desired after cooling.
ICING:
1/2 teaspoon vanilla
1 and 1/2 tablespoons milk or water
1 cup confection sugar
Place icing ingredients in some bowl and mix thoroughly. Use silicone spatula or whatever to spread on cookies and sprinkle with decorations if desired.
PS optional choice— you can add 1/4 teaspoon cinnamon to the cookie batter— I have not tried this.

3 good sized potatoes
16 ounces frozen garden peas
1 carrot sliced
1 can 15 ounces fire roasted diced tomatoes
2 tablespoons Worcestershire sauce
1 tablespoon gf soy sauce
1 onion diced
2-3 minced garlic cloves
Option can Lima beans
Fresh or dried dill to taste
1 teaspoon or so dried mint
Salt and pepper to taste
1 cup or a bit more of water— may need 2 cups if adding limas.
DIRECTIONS
Sauté onion and carrot in a bit of oil for 5 minutes until onion softens. Add garlic for another minute. Add tomatoes and water and potatoes, dill and mint. Cook until vegetable almost tender 20-25 minutes . Add peas and Worcestershire sauce and soy sauce. When veggies are all done add limas if desired and salt and pepper.
Optional- a bit of dill pickle juice

7.5 ounces canned salmon (remove bones and skin)

1/2 cup dry white wine ( can sub chicken broth if out)
3/4 cup heavy whipping cream
1/2 cup grated Parmesan cheese
1 tablespoon parsley
DIRECTIONS
Cook pasta
While pasta is cooking melt butter in skillet (used iron one). Turn off heat and add cornstarch mixing well. Add garlic and onion powder and slowly add wine mixing well. Add cream mix well and turn burner back on a minute- iron skillet holds heat so a lot of heat is unnecessary.Add Parmesan cheese and mix well . Just before serving add salmon and parsley. Mix well with your noodles.

2 sausage links ( used smoked Gouda apple chicken sausage from Target)
1 large onion diced, 1 teaspoon Italian seasoning
Pinch or so black pepper
4 cloves minced garlic
3 small russet potatoes or three large red potatoes diced
6 cups chicken broth
2 cans (15 ounce each) navy beans or cannellini beans drained snd rinsed
2 cups chopped kale
1 tablespoon chopped parsley
Small squeeze of lemon if desired about 1/2 teaspoons
DIRECTIONS
Brown sausage and onion. Add seasonings and garlic. Sautéing until onion done.
Add potatoes and broth. Leave cover partly open and cook 12 minutes.
After 12 minutes add the drained beans. Simmer 10 more minutes or until potatoes are tender.
Shut off heat and add kale and parsley and lemon if using.
Let set a few minutes to wilt the kale.
