sardine crackers

I saw someone do this online so now I am hooked.

1 can of wild planet sardines drained and rinsed and patted with paper toweling.
1 tablespoon gelatin

Mix thoroughly and place in waffle maker for 7 minutes.  I love it with a bit of primal avocado oil mayo.

Eggs in purgatory (tomato sauce )


 I saw this cooked on a movie so I decided to try it tonight and it was awesome.The sauce you use makes a huge difference.

chopped onion, about 2 tablespoons
2 cloves of chopped garlic
1 & 1/2 or -2 cups pasta sauce (I used Nature’s Promise tomato and basil pasta sauce) I used 1/2 a jar. 
2 eggs
2-3 tablespoons shredded Parmesan
sliced olives
optional: fresh basil or fresh oregano

optional--bread for dipping or slices of chicken

In a 9 inch iron skillet saute onions and when almost tender add the garlic. Cook until just starting to turn brown (or you can do it less).  

Add the sauce. Once sauce is warm , make 2 indentations and place one egg in each.  Cook covered until egg is done to your liking. I cooked mine for about 7 minutes, but  5-6 would have made the yolk a bit more dippable.   

Sprinkle with Parmesan.  Add sliced olives if desired. Top with fresh basil or oregano if desired.



I ate it all for supper. I did have a bit of chicken slices with it, yum!

oatmeal pancakes (no flour, gf)


Or you can make 3 mini waffles instead!

Makes 3 mini waffles if you prefer


 Nice, and easy

3/4 cups gf rolled oats
3/8 cup water
1 tablespoon melted butter
1 teaspoon baking powder
1/2 teaspoon vanilla
1/4 teaspoon salt
1/8 to 1/4 teaspoon cinnamon
1 egg

Place all ingredients in food processor and mix thoroughly.  Let sit for ten minutes (don't skip). Cook as usual in non stick pan with a bit of butter.
