Crockpot rice


 1/2 cup jasmine rice 

1 cup water (used a tad more but next time will try less

Sprayed crockpot with cooking spray (olive oil). Cooked on high 65 minutes ( might have been done at 60- will check next time,

Fried tofu


 So tasty and easy

Extra firm tofu

Flour (I used gf King Arthur measure for measure)

Milk( I used coconut)

Panko crumbs (I used gf)

Oil

DIRECTIONS 

Squeeze out tofu and slice. Sprinkle salt and pepper. Dip in flour then milk then crumbs then sauté on both sides in some oil.

Toasted peanut butter and banana wrap


 
So very yummy/ just need peanut butter and banana and your choice of wrap.Used my griddle thing!!

I placed the peanut butter and banana in center and rolled as usual for a wrap and cooked briefly till toasted. This was a gf wrap and it is great!

Pasta with clam sauce


 Quick dish and also good with added chicken or shrimp.

Directions 

While pasta is cooking place sauce ingredients in food processor and blend. Then place sauce in a pan and heat it. You can add chicken or shrimp to the sauce when serving or heating.

16 ounce pasta of choice 

SAUCE ingredients:

1 can progresso New England clam chowder 

1 cup milk

2 cloves garlic

1/3 to 1/2 cup Parmesan 

Blend the above sauce ingredients in food processor or blender and place in a pot to heat.


Optional Additions to sauce after blending the above sauce ingredients: parsley, green onions, peas, chicken or shrimp.

Marinara egg cups



Tried this recipe above from instagram— loved it. We had to cook ours longer than 15 minutes since our marinara was icebox cold. Plus I don’t like runny yolks. Probably took 25 minutes? Great with crusty bread dipped or taking the sauce and placing it on the bread.? Good with crispy fries as well. 


We had it for a Sunday night supper.Note: I forgot the thyme 😝

Asian chicken and rice


 
Really tasty and easy. Makes 3 servings.

1 box zatarains yellow rice

1 can (12.5 ounce) chicken or left over chicken 

1 bunch bok Choy chopped

1 package frozen Asian vegetables (I use microwave Birds Eye)

Sesame oil

Garlic

Directions 

Cook rice according to directions. Meanwhile sauté bok choy in a bit of sesame oil/-cooking the white part first then when crisp tender add the green part for a few minutes with some garlic— about a large clove. 

Cook your frozen Asian veggies in microwave.. Mix veggies, bok choy, drained canned chicken, and rice together. 

Makes 3 good sized servings.


Chocolate banana bread


Great use of ripe bananas and hits the spot for chocolate cravings.


Ingredients

  • 1/2 cup oat flour ( or grind quick oats)
  • 1/2 cup cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2 large mashed bananas (~1 cup mashed)
  • 2 eggs
  • 1/4 cup peanut butter
  • 1/4 cup maple syrup
  • 1 tsp vanilla
  • 1/2 cup chocolate chips

Grease a 9” loaf pan and preheat oven to 350 F

I  just threw everything in my food processor except for the chips. Blended well. Pour in pan and mix chips in with silicone spatula gently. Cook for 38-42 minutes or until center is toothpick clean.

Cool at least 10 minutes before cutting. Nice topped with chocolate syrup when serving 🤓

Pork roast crockpot


 Love this and so easy. 


2 pound pork tenderloin

1/4 cup soy sauce ( low salt is best)


1 T yellow mustard ( used a kind with the grains- nice)

2-3 T maple syrup

2 T olive oil

1 T diced dried onions

1 1/2 t. garlic powder. 


Mix above ingredients. Pour over tenderloin in the crock pot. Cook on low for 6 hours.

Note: for a one pound roast it took about 2 and a 1/2 hour on low to reach 160f. Let cool 10 minutes before cutting,

Recipe found above- took 90 seconds in my 900 watt microwave. Go to link for directions, but here are the ingredients,…note: about 60 seconds in high powered microwave 

Ingredients

  • 4 tablespoons All-purpose Gluten-free Flour (me=King Arthur gf measure for measure flour)
  • 2 tablespoons Sugar
  • ½ teaspoon Baking Powder - gluten-free
  • ½ teaspoon Vanilla Extract
  • 1 large Egg
  • 2 tablespoons Melted Butter
  • 1 tablespoon Water
