- 1 large sweet potatoes, sliced in ¼-inch rounds
- Grapeseed or olive oil
- Ground cinnamon
- 1 cup whole milk ricotta cheese I USED FETA
- 1-½ teaspoons Italian seasoning
- 1 tablespoon + 1 teaspoon honey
- ¼ teaspoon sea salt, or to taste
- 1 cup raw walnuts, roasted and chopped
- ¾ cup dried cranberries

- Go to the website for directions--I didn't have honey and used maple syrup---honey would be better. I just used a bit of Feta instead of ricotta and I just used a bit since I shouldn't be eating cheese ;-(

These had great flavor!!! Good with some white wine.
