Cottage cheese crackers


 Mine took longer than the recipe called for, but these are enjoyable. I added some parmesan to mine— probably about a tablespoon. Next time I will try a higher temperature than the 225F

Flat bread keto

I love this flatbread!!!! easy!!!!


1 cup cottage cheese
2 eggs.                     
salt.                        



Mix well (food processor works fine)  Place parchment paper in a sided cookie sheet (around 15 by 9) and brush with olive oil. Pour into cookie sheet. Spread into rectangular shape and bake at 350 for 30-35 minutes---it can vary depending on how much it is spread out so check at 25 minutes .

NOTE: you can make this into a pizza base if you don't spread it as much and bake it longer.

When browned remove from oven and allow to cool for a few minutes and cut with knife or pizza cutter into strips. It firms up as it cools so this is an important step.

In this sandwich I used slices of chicken and some arugala mixed with the following:

plain yogurt with a bit of lemon juice ,mustard ,worcestershire sauce , parmasean cheese, salt and pepper--I just do this to taste , but here is a recipe from online:

1 TBS lemon juice
1 teaspoon mustard
1/3 cup plain yogurt (or Greek)
worcestershire sauce
2 Tbs parmasean
black pepper
salt

Sardine pizza










 


Ok so this is the best way I have found for using sardines ;-).

I used the brand of King Oscar Mediterranean style which needs no added seasoning!

1 tablespoon chopped red onion ( I prefer more!!)
3 eggs
I can of the sardines including the oil
Mozzarella and cheddar as much as you like for the topping.

Sauté onion in nonstick pan about 2 minutes or until tender, but not brown. I use the number 3 setting on my stove for this recipe.

In a bowl mix eggs and the whole can of sardines. If not using the brand I use then you can add salt and pepper and sweet paprika, but not needed if you use my brand.

Pour into the pan where the onions are ready.

Cook covered until top is pretty firm and bottom is set. About 5 minutes.

Flip it into a large dinner plate and slide back into pan.. The browned side is now up. 

Sprinkle with cheese. Cover until cheese is melted.

Since my stove is electric I shut it off for the melting of the cheese since the heat is retained.

NOTE: if I don't have King Oscar specific brand mentioned above I use the Wild Planet Sardines in lemon and olive oil. I drain it. and remove any lemon slices. Then mash the sardines  with thyme, rosemary, majorem, oregano, garlic powder, black pepper, and a bit of smoked paprika.   I also add some sliced olives.  Cook as described above.
