Used this spice from target plus some cinnamon Nice fall dish for Breakfast or whatever
What I used:
1 cup of Nancy's probiotic cottage cheese (organic 4 Percent from whole foods)
1 egg
3 tablespoons unsweetened pumpkin puree
*pumpkin pie spice (I just put about 1/4 -1/2 teaspoon, I think) and I added some cinnamon
1/8 teaspoon vanilla
(me-no sweetener--but you could add some)
* some like 1-2 teaspoons of the pumpkin pie spice--I used less but added cinnamon. Then I sprinkled more pumpkin pie spice after cooking.
Blend ingredients well in food processor. Pour in dish (I didn't grease) My dish was the 6 inch round one and some people use a smaller size. My oven seems to cook slower than a lot of folks. Many people cook theirs 20 minutes , but mine needed longer.
Bake in 350 F for 20-30 minutes depending on the size of your dish. You want the center a bit jiggly so it doesn't come out dry.
Mine came out very creamy--but the brand of cottage cheese makes a difference. You can serve warm or refrigerate first.
When serving you can top with added spices, and/or yogurt or whipped cream if desired.
