Salmon asparagus quiche

Recipe from Betty Crocker so good! I used gf Bisquick and added 2 tablespoons melted butter to the batter. The fresh basil is so good in this. Note: I did microwave the chopped asparagus 2 minutes before assembly .

Pumpkin ziti

Ingredients
  1. 12 ounces ziti or rigatoni noodles, cooked to al dente- I used gf brown rice noodles by Tinkyada 
  2. 1 pound sage sausage (can substitute for sweet Italian) I used 2 links from the sausage pictured above from Target and they are gf- tasty- chopped mine small.
  3. 1/2 onion, diced
  4. 2 cloves garlic, minced
  5. 1 bay leaf
  6. 4 sage leaves, chopped (I used dried sage to taste)
  7. 1/2 teaspoon nutmeg
  8. 1/4 teaspoon red pepper flakes (me a pinch)
  9. pinch of cinnamon
  10. 1/2 cup dry white wine (like chardonnay)
  11. 1 cup vegetable stock(me chicken bullion)
  12. 15 oz can pumpkin puree
  13. salt and pepper to taste
  14. 1/4 cup finely grated Parmesan cheese
  15. Me added:a pinch or two smoked paprika and some fennel seed

Lentil and roasted vegetable casserole

Note: really good served with cranberry sauce. The website says she cooks it for a Christmas dish. 

The ingredients are listed below, but go to the above link for the directions —

For the roast veg topping

  • 1/2 large cauliflower chopped into florets
  • 1 medium sweet potato peeled and chopped into small chunks
  • 3 carrots peeled and chopped into small chunks
  • 2 medium potatoes peeled and chopped into small chunks
  • 1 tbsp olive oil
  • Sea salt
  • Black pepper
  • 2 tbsp coconut yogurt or plant-based yogurt (me regular extra)
  • 2 tbsp nutritional yeast (me omit)
  • 1 tsp sea salt
  • 1 tsp Dion mustard
  • Black pepper

For the caramelised onions

  • 3 onions roughly chopped into slices
  • 2 tbsp olive oil
  • Pinch sea salt

For the filling ingredients

  • 2 large onions chopped roughly (used 1 plus dried minced onion)
  • 3 tbsp extra virgin olive oil
  • 6 cloves garlic sliced
  • 300 g dark green or Puy lentils rinsed (me brown ones)
  • 1.5 L water-(6 cups)
  • 1 tbsp bouillon stock ( me used fry beef bullion pack)
  • 250 g mushrooms chopped
  • Juice 1/2 lemon
  • 2 tsp sea salt
  • 2 tbsp balsamic glaze (me 1 tablespoon balsamic vinegar)
  • 1 tbsp vegan Worcester sauce
  • 2 tbsp extra virgin olive oil
  • 1 tsp tamari (me closer to a tablespoon)
  • Twist black pepper

For the toppings

  • Handful walnuts
  • Drizzle olive oil

Note: I had to up the temperature for the roasting of the vegetables— I started at 350, but after 30 minutes I upped it to 400 then 425. Also since I used the brown lentils I was careful not to overcook—you don’t want them mushy.

Impossible cherry pie Bisquick

I am in love with this— better than regular cherry pie as far as I am concerned! I used gf bisquick so I added an extra tablespoon of butter to the batter and also to the crumb topping. After doing the topping section of the cooking it took ten extra minutes beyond the ten they called for.

INGREDIENTS


DIRECTIONS

  1. Preheat oven to 400 degrees Fahrenheit.
  2. Grease a 10-inch pie plate.
  3. Beat all ingredients, except pie filling and streusel, until smooth - 15 seconds in blender on high or 1 minute with hand beater.
  4. Pour into pie plate.
  5. Spoon pie filling evenly over top.
  6. Bake for 25 minutes.
  7. Meanwhile, make streusel: Cut 2 Tablespoons firm margarine or butter into 1/2 cup Bisquick baking mix, 1/2 cup packed brown sugar and 1/2 teaspoons ground cinnamon until crumbly.
  8. Top pie with streusel.
  9. Bake about 10 minutes longer until streusel is brown; cool.

Chili Mac and cheese

I substituted Gardein ground be’f  made from soy for the ground beef and I used less. For the cheese part I used some cheese packet from a Mac and cheese pouch. Cooked noodles separately since I have to have gf and hubby does not. So instead of beef broth I used dried beef bullion. I use milder spices and used a bell pepper in mine. I used some smoked paprika instead of regular and I used different amounts than those below. Below are the normal ingredients

Ingredients

  • 1 tbsp olive oil
  • 2 garlic cloves , minced
  • 1 onion , finely chopped
  • 1 red capsicum / bell pepper , chopped
  • 500g / 1 lb ground beef (mince) , I use lean
  • 800g / 28 oz crushed canned tomato
  • 420g / 14 oz can red kidney beans , drained
  • 2 1/2 cups (625 ml) beef broth (chicken broth also ok)
  • 250g / 8 oz elbow macaroni pasta (elbow pasta), uncooked
  • 2 cups (200g) shredded cheese (cheddar, Monterey Jack, tasty cheese)
  • 1/4 cup coriander / cilantro finely chopped, for garnish

Spices (Homemade Chili Powder):

  • 1 tsp cayenne pepper or pure chilli powder (adjust spiciness to taste) (Note 1)
  • 2 tsp paprika powder
  • 2 tsp cumin powder
  • 1 1/2 tsp onion powder (can sub garlic powder)
  • 1 tsp dried oregano
  • 1/2 tsp black pepper
  • 1 1/4 tsp salt

Bisquick cheesecake


Above is with the sour cream based topping.
Note if using gf bisquick add 1-2 tablespoons of melted butter to the main mixture. Also if you don’t have a powerful blender then cream the sugar and cream cheese in a bowl then add eggs and then remaining ingredients. I used a 9” springform pan instead. This is easy and creamy.



INGREDIENTS

  • Heat oven to 350 degrees.
  • Grease 9 inch pie plate.Or springform pan
  • Place milk, 2 t.
  • vanilla, eggs,1 c.
  • sugar, and bisquick in blender container.
  • Cover and blend on high 15 seconds.
  • Add cream cheese.
  • Cover and blend on high 2 minutes.
  • Pour into pie plate.
  • Bake 40-45 minutes, or until center is firm.
  • Combine sour cream, 2 t.
  • vanilla, and 2 T.
  • sugar.
  • Spread over cheesecake that has cooled.

Good served with cherry pie filling
