Very Low Fat Chocolate Icing or chocolate pudding!

Makes 24 servings Great frosting and you can use it for pudding too!! To make dairy free don't use the butter.
Ingredients :
1/2 cup cocoa powder 4 tabl Corn Starch 1 cup sugar 1/4 tsp salt 2 cup non fat milk (I used soy milk and or/ almond milk) 1 tbl butter (can omit) 2 tsp vanilla
Directions:
Mix together cocoa, corn starch, sugar and salt. Add milk slowly and stir. Cook on medium heat until thick (stovetop) stirring continuously. It takes about 10-12 minutes to get nice and thick--it will eventually come to a boil and then turn down and let it simmer for about one more minute and then remove from the burner. Add butter and vanilla. Cool, then spread Low fat or non-fat milk may be used, making this a very low-fat cake frosting. Note: this is also good by itself! ha! kind of like a pudding.

Not really 24 servings---It will frost a regular 8 inch cake--two layers with about 1/2 cup or so left over. So It would probably frost a 3 layer 8 inch cake.
