Lemon pound cake keto



 Very nice treat!


Mix wet ingredients:

(Mix cream cheese and butter first and then add eggs and lemon extract):

4 oz cream cheese (softened)
4 tablespoons butter (softened a bit)
4 large eggs
4 teaspoons lemon extract

Add dry ingredients to the above one at a time:

1 & 1/4 cup almond flour
2 teaspoons baking powder
sprinkle of salt
3 tablespoons allulose powder (sweetener)

Pour in a 9 by 5 inch loaf pan that has either been oiled or lined with parchment paper (I did the paper)

Bake at 350F for 35 minutes. Allow to cool completely before frosting if adding frosting.  NOTE: I let mine cool ten minutes before removing the parchment paper , but I lifted it out of the pan first using the paper--

Frosting:

4 ounces cream cheese softened
4 T. butter softened
1-2 tablespoons of allulose or more to taste (or whatever sweetener you use)
2 t. lemon extract

Beat until fluffy.
