Cottage cheese pumpkin breakfast


 Used this spice from target plus some cinnamon 

Nice fall dish for Breakfast or whatever

What I used:

1 cup of Nancy's probiotic cottage cheese (organic 4 Percent from whole foods)
1 egg
3 tablespoons unsweetened pumpkin puree
*pumpkin pie spice (I just put about 1/4 -1/2 teaspoon, I think) and I added some cinnamon
1/8 teaspoon vanilla
(me-no sweetener--but you could add some)

* some like 1-2 teaspoons of the pumpkin pie spice--I used less but added cinnamon. Then I sprinkled more pumpkin pie spice after cooking.

Blend ingredients well in food processor. Pour in dish (I didn't grease) My dish was the 6 inch round one and some people use a smaller size. My oven seems to cook slower than a lot of folks. Many people cook theirs 20 minutes , but mine needed longer.

Bake in 350 F for 20-30 minutes depending on the size of your dish. You want the center a bit jiggly so it doesn't come out dry. 

Mine came out very creamy--but the brand of cottage cheese makes a difference. You can serve warm or refrigerate first.

When serving you can top with added spices, and/or yogurt or whipped cream if desired.

Chickpea roasted air fryer


 Easy

Preheat air fryer to 390 F

Take 1 can chickpeas and drain and rinse.

Place in a bowl and mix with a spritz of olive oil, salt, paprika, onion powder, garlic powder or whatever you want.

Place in air fryer and cook about 12-15 minutes shaking a few times during the cooking process. Check near ten minutes , but continue cooking  until your desired crispness. 


Squash/ yellow summer chips


 Really good. I did these in the air fryer (preheated at 375) . After preheating, I cooked for between eight and 10 minutes.

I sliced up the yellow Summer squash and sprinkled salt, onion powder, garlic powder, and paprika and a little olive oil

Fudge cottage cheese


 I really like this.creamy and hits the spot for chocolate cravings.

1cup full fat cottage cheese 

1/3 cup dark chocolate chips

1 tablespoon coconut oil

1 teaspoon vanilla extract ( of course I forgot)

Blend cottage cheese in food processor. 

Melt coconut oil with chips in microwave.

Stir together and put in parchment lined dish ( I used 5x6 pan. Freeze 30 minutes.
