Chicken waffle sandwich keto





The last 2 photos were after buying a mini waffle maker— much better for chaffles 
Good use for left over chicken! (My only problem was my Waffle maker was more of a Belgium style so it made this pretty thick in the original top 2 photos. Now I have a mini.

1 cup chopped cooked chicken
1 egg
1/4 cup cheddar cheese shredded
1/4 cup either Parmesan or Mozzarella

Mix  the above ingredients in food processor, and place in your preheated waffle iron. Cook until done to your liking--my waffle maker is big --it only took a few minutes 3-4?  I cut mine in half to make the sandwich.

I placed lettuce and bacon on mine and topped with a sauce made from Primal Kitchen Mayo that uses Avocado oil, plus adding Bubbies Kosher dill relish, mustard, and paprika (this mixture makes a sauce similar to McDonald's Big Mac)
 

Lemon pound cake keto



 Very nice treat!


Mix wet ingredients:

(Mix cream cheese and butter first and then add eggs and lemon extract):

4 oz cream cheese (softened)
4 tablespoons butter (softened a bit)
4 large eggs
4 teaspoons lemon extract

Add dry ingredients to the above one at a time:

1 & 1/4 cup almond flour
2 teaspoons baking powder
sprinkle of salt
3 tablespoons allulose powder (sweetener)

Pour in a 9 by 5 inch loaf pan that has either been oiled or lined with parchment paper (I did the paper)

Bake at 350F for 35 minutes. Allow to cool completely before frosting if adding frosting.  NOTE: I let mine cool ten minutes before removing the parchment paper , but I lifted it out of the pan first using the paper--

Frosting:

4 ounces cream cheese softened
4 T. butter softened
1-2 tablespoons of allulose or more to taste (or whatever sweetener you use)
2 t. lemon extract

Beat until fluffy.

Noodles carnivore/keto



 

These are very tasty and I should’ve cooked mine a hair less, but I did what the recipe called for. I really like them and you can use them for noodles or for lasagna noodles or for a flatbread. I made mine the size of egg noodles ,wider ---here is the recipe below, and I will give a link to the original



Preheat oven 350 F


Place in food processor:


4 eggs

4 ounces cream cheese

2 tablespoons plain gelatin

1/4 cup pork panko (I used the above Epic Pork rinds--just grinding enough)


Spread on a parchment lined baking sheet (air baking sheet would have been better). Bake at 350 F for 20 minutes (me possible a bit less as mine was fairly brown on the bottom but it still tasted really good!).

Let cool so you can handle it. If making noodles instead of flat bread you can roll and cut it or you could cut it from the flat condition .

Great for wraps. After making the way above, I put cooked beef and mozzarella cheese inside of the wrap and baked it in the air fryer on a rack at 400 for five minutes. Nice and crunchy and good.

Cheesecake carnivore or keto



 Very tasty- quick to whip up, but time to bake.

Ingredients 

16 ounces cream cheese (full fat) softened 

2 large eggs

4 ounces sour cream 

Butter for greasing 

I added: 2 tablespoons of allulose powder and 1/2 teaspoon vanilla extract— 

Oven only at 300 F and you use a container of boiling water on bottom rack and place cake on middle rack cooking until edges start to get firm . About 45 minutes in 8” springform pan that has been greased.

Then turn off heat leaving everything in the oven with door shut for an hour. 

Then remove and cool at room temperature. Then refrigerate at least 4 hours.

Pancakes one ingredient Carnivore!


 So easy and tasty. After cooking these, I sprinkled them with pumpkin pie spice since it’s fall this recipe makes 5 pancakes.

2 eggs  yolks and whites separated

Salt and pumpkin pie spice optional 

Separate egg whites from yolks. Meanwhile heat your pan with a little butter if using cast-iron

Whip egg whites until very stiff— you can turn your bowl upside down and they won’t fall out. 

Next whip your yolks in separate bowl with a little salt if desired.

Slowly fold in your yolks to the whites a little bit at a time using silicone spatula. 

Cook as usual, feeling sides to make sure they are done to your liking. Sprinkle with pumpkin pie spice or cinnamon or whatever..

Crème brûlée carnivore




 Very rich and creamy


4 egg yolks OR 3 egg yolks and one whole egg (that is what I did)
2 cups heavy cream
1 teaspoon of vanilla (you can do less--but I like more than the 1/4 teaspoon it called for) or you can omit.


Preheat oven to 325F

With a mixer or blender, blend egg yolks and heavy cream adding vanilla if using. Blend just until combined.

Pour into a medium sized bowl (mine was 7 inches in diameter) or individual ramekins.

Place bowl or ramekins in a larger baking dish. Fill the baking dish with about an inch of hot water--making a water bath.

Bake for 30-65 minutes until internal temperature reaches 170 F.  Mine took at least the 65 minutes.
However I did not put hot water for the bath, I used cold.  Also if you use smaller individual bowls it reduces the time. It still should be jiggly in the center .

Let it cool at room temperature about an hour. Then refrigerate fro 2-4 hours---this solidifies as it cools so is necessary

PS This would also be good with a bit of allulose sweetner.  Some sprinkle this sweetner on top after the cooking and  cooling and torch the top.

Mac and cheese carnivore

Tasty and a nice change for a carnivore or keto diet. It is hard to stop eating 🤣

1 cup heavy whipping cream

Cheddar cheese 3/4 cup shredded or as much as you want 

2eggs

1 pound ground chicken breast 

Optional pork rind chips

Salt and pepper to taste


Take ground chicken and 2 large eggs blend this in food processor. Place in ziplock bag and put in freezer for ten minutes.

For creamy sauce place inch of water in a pot and place another pot inside this pot ( making a double boiler). Place cream inside top pot. When warm add the cheese in portions stirring to blend. Add salt and pepper.

Meanwhile bring a large pot of water to boil. Take the bag of chicken cut the corner and squeeze chicken mixture in balls the size of gnocchi. Cook for 3 minutes— they will float to top.

Place gnocchi in broiler safe bowl. Add your cheese sauce. You can add more cheese on top. At this point you can place it in the broiler for a few minutes or you can spread crumbled pork rind chips on top with added cheese then broil. Watch carefully or the pork rind chips can burn.

 But do not microwave leftovers!!! It turns the sauce into a liquid-y mess! Probably would work slowly heated on stove top.

Egg cloud rolls carnivore







 So easy just eggs and salt. Takes 15 minutes from start to eating!

3 large eggs separated

Salt— sprinkled into yolk mixture


Directions:

Preheat oven to 400F.

Separate the whites from the yolks.

Beat whites until very stiff so that if you turn the bowl upside down they don't fall out.

Next add salt to your yolks. Beat yolks.

Now gently fold the yolks into the whites using a silicone spatula, or whatever you like using.

Place mounds of this on a parchment lined baking sheet (I used an air bake pan).

Cook ten minutes.

I took them out and ate one, and then let the others cool a bit and sliced one to make a sandwich. Great with pork tenderloin, cheese , and a bit of Primal kitchen mayo (Avacado one). But to keep it carnivore you don't need the mayo--could use sour cream or yogurt or nothing.


Pork tenderloin in air fryer

Love— I  did add rosemary and garlic powder along with the salt. For the oil I used some grease left from some pork belly. Found the recipe below from AI

  4. Air fry the tenderloin. Place the seasoned pork tenderloin in the air fryer basket, ensuring it has space for air to circulate. Cook at 400°F for 10 minutes.
  5. Flip and finish. After 10 minutes, flip the tenderloin over to ensure even cooking. Continue cooking for another 8–12 minutes, or until the internal temperature reaches your desired doneness.
    • The USDA safe internal temperature for pork is 145°F (63°C) for a medium-rare finish.
    • For medium-well, aim for 160°F (71°C).
  6. Rest the meat. Once cooked, transfer the pork tenderloin to a cutting board. Cover it with foil and let it rest for at least 5–10 minutes. This allows the juices to redistribute, ensuring a tender, moist result. The internal temperature will continue to rise slightly as it rests.
  7. Slice and serve. Slice the tenderloin into medallions and enjoy. You can pour any juices that collected on the cutting board over the sliced meat for extra flavor.

Pizza crust from chicken/ carnivore



 Although this isn’t my favorite pizza crust, I do like it when it’s left over the next day for some reason. It seemed to have less of a chicken like taste to it the next day anyways I wanted to save it. It’s a good way to use up some leftover chicken. French toast carnivore Keto




Wonderful!!!!I cooked mine more like 30-35 minutes : recipe found on Pinterest 

 I sprinkled cinnamon on mine and added the raspberries on top. Some serve with whipped cream or sour cream mixed with vanilla.
