blueberry cottage cheese oat breakfast pie


 Nice. Use Good Culture cottage cheese (not as watery).  If you have a watery one then it is better to drain it first.  I like this served with some fresh strawberries as well.


2 cups cottage cheese (drain if not using Good Culture or Nancy's)
1 cup fresh blueberries
1/2 cup rolled oatmeal
1/4 cup allulose or sweetener of choice
1/4 cup milk 
2 large eggs
1 teaspoon vanilla extract
1/2 teaspoon cinnamon

Preheat oven 375F

In large bowl mix all except for the blueberries.  Mix until pretty smooth.

Fold in blueberries.

Transfer to a greased 9" pie pan.  Bake 32-40 minutes until the center is set and the top is golden brownish.

Let cool for it to set.  Also you can serve cold.

Yogurt cake keto





( In a 7” round pan)

2.5 ounces cream cheese (see note if you don't have any)
1/2 cup plain 4% yogurt
2 tab allulose powder (sweetner)
vanilla-a splash
3 eggs
dash of salt

mix cream cheese with allulose . Add eggs. Add yogurt. Dash of salt.  Pour into the pan and cook in preheated 350 F oven for 30-35 minutes.

Note: If you have Greek yogurt you can mix one cup of it with 4 eggs, and some vanilla and allulose powder.

breakfast casserole keto/carnivore


 12 eggs
3/4 cup whipping cream (liquid or  milk of choice)
1 pound ground breakfast sausage
black pepper if desired
1/2 pound bacon
2 cups grated cheese (divided in 1/2)


Preheat oven 350F

Cook sausage. Cook bacon (cooking bacon in air fryer at 375 for 30-35 minutes if you have one).

Mix eggs. Mix in the cream with the eggs. Mix in cooked sausage and 1 cup of the cheese. Pour into 13 by 9 inch pan. Top with the rest of the cheese and broken up bacon.

Cook 30-35 minutes.

French toast #2 keto


 

Satisfying!

8 eggs
8 ounces cream cheese
4 TBS butter
splash vanilla

Optional when serving: whipped cream and strawberries

Beat cream cheese until smooth. Add the rest and pour into 9 inch loaf pan. Bake around 43-45 minutes.
Let cool before slicing.

Slice into 8 slices. Place in frying pan and brown on both sides. I served mine with strawberries and whipped cream.
