I really enjoyed this.
1/2 cup cottage cheese (used good culture brand)
1/4 cup shredded coconut
1 large egg
2 tablespoons almond flour
1 tablespoon allulose or sweetner of choice
1/2 teaspoon vanilla extract
1/2 teaspoon baking powder
Mix thoroughly . (I use an immersion blender). Place in greased mug (good size). Microwave for 1 and 1/2 minutes. You may need up to 2 depending on strength of microwave.
