I saw this cooked on a movie so I decided to try it tonight and it was awesome.
chopped onion, about 2 tablespoons
2 cloves of chopped garlic
1 cup pasta sauce (I used 365 tomato and basil pasta sauce)
2 eggs
2-3 tablespoons shredded Parmesan
sliced olives
optional: fresh basil or fresh oregano
optional--bread for dipping or slices of chicken
In a 9 inch iron skillet saute onions and when almost tender add the garlic. Cook until just starting to turn brown (or you can do it less).
Add the cup of sauce. Once sauce is warm , make 2 indentations and place one egg in each. Cook covered until egg is done to your liking. I cooked mine for about 7 minutes, but 5-6 would have made the yolk a bit more dippable.
Sprinkle with Parmesan. Add sliced olives if desired. Top with fresh basil or oregano if desired.

I ate it all for supper. I did have a bit of chicken slices with it, yum!
