So good-/ one of the best mug cakes I have tried,
For the cinnamon roll
- 1/4 cup gluten free pancake mix — I used gf bisquick
- 1/4 tsp baking powder
- 2 tbsp almond milk or whatever plus more, if needed
- 1 tbsp maple syrup
- 1 tablespoon butter
- Pinch of sea salt
For the cinnamon sugar
- 2 tsp sugar
- 1/4 tsp cinnamon
For the sugar glaze
- 2 tbsp powdered sugar
- 1 tsp almond milk
Grease your mug. Then, Melt butter in the mug in your microwave- 20-30 seconds. Mix the first 6 cake ingredients in with the butter in the mug. Should look like a thick pancake batter.
In a separate dish mix cinnamon and sugar. Sprinkle evenly over the top of the cake ingredients that are in your mug. Swirl it in a circular motion with a toothpick.
Microwave for about a minute in a high powered microwave or 1 minute 20 seconds in a 900 watt microwave.
Mix your powdered sugar and milk for the glaze and spread over the top.
Note: if not using gf bisquick you may need less butter. The gf bisquick has no fat added in it.
