Meatballs - bean balls VEGAN GF

Ingredients

For meatballs:

* optional-a few teaspoons of dill pickle juice is good too or relish 
* in place of cumin can use some ginger, turmeric, cardamom and coriander in amounts desired 
  • (I used just a few squirts--of oil-in pan-didn't need as much as called for since I have a ceramic pan) 

I mixed all ingredients -except oil- in a big bowl and then did it in batches in the food processor since my processor is small.  You want them chopped well , but you don't want paste--check the link on the original recipe for more details. If you don't use organic ones the beans may not be as soft and you may need to add more Ketchup. You pulse it about 6 to 8 times per batch.

  • Form into balls--mine made about 13 large balls--If you do one inch balls it makes more like 20-23 balls.
  • I cooked a temperature between low and medium in the pan for just a few minutes with a few squirts of oil--to brown then added sauce.
The linked recipe has a BQ sauce homemade. These are great with BQ sauce , but we also like them with spaghetti sauce.
pS can bake instead at 375 on parchment lined pan for 15 minutes turning once after the first 15 minutes. So about 7 minutes each side.


Cuban Black Bean Veggie burgers



Cuban black bean burgers: next time I might lower the lime which makes them a little tart and yet the left overs from the freezer were perfect. Here are the ingredients--go to the link for directions. I had to cook mine lower than the medium she recommends because even on medium mine burned some,but you know, I liked them this way!!. I ended up placing them in the oven afterwords to cook on the inside a bit more. These are nice topped with all your favorite fixings! I freeze mine in separate baggies and have them whenever I want--just microwave.

INGREDIENTS
  • 1 cup cooked brown rice (short-grain or sweet brown works great) White rice works too.
  • 1 ripe plantain, peeled and diced COOKED 5 min in water (see Notes below for choosing plantains-at link)
  • 1 15-oz. can cooked black beans (or 1 ½ cups)
  • ¾ cup rolled oats (I used GF)
  • 1 medium red or yellow onion chopped
  • 3 cloves garlic, minced
  • ½ cup grated carrots (I used the ones that come shredded all ready) 
  • ½ of a red bell pepper, diced
  • 2 tablespoons lime juice  OR White wine vinegar (maybe less--yet the leftovers were perfect )
  • 1 teaspoon lime zest
  • ½ cup fresh cilantro leaves, chopped
  • 1 ½ teaspoons dried oregano
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • ½ teaspoon cumin

Roasted mini potatoes / no oil!



We all LOVED these. I used the tiny potatoes that were purple and white.

Roasted mini potatoes/oil free! and delicious!  
Heat oven 420. 
1 pound of mini potatoes (about 1inch to 1/¼ inch–if bigger cut in ½)
2 tsp garlic powder
1 tsp Italian seasoning
fresh ground salt Himalayan salt (or whatever)
pepper to taste
1. preheat oven and line pan with parchment paper. (don’t heat higher than 420 F. or paper burns.
2. place potatoes in a bowl and toss with the seasoning.
3. place on parchment cooking for 20 minutes, flip them around, then cook another 20 minutes or until done.

GF Oat flat bread



Nice toasted with jam or what ever--favorite way is Jam ;-)

2 ingredients: Oat flour and water (I process GF oats in food processor )

Oat flat bread–1 cup GF quick oats blended into oat flour. Add about  ½  to 3/4 cup water(start with1/2 then add up– letting stand a moment to set a bit to thicken, but I usually use 3/4 cup water)--Let sit for a minute to thicken-then spread it out on some parchment paper and bake until you have flatbread. (350ish for 20 minutes or so ought to do it, but you can experiment.  Finish in the toaster for a little delicious crunch

black beans with Brown Basmati rice



and


easy dish-can serve cold or room temp in summertime ;-)

Black beans 1 can, Brown Basmati rice (1 cup uncooked and then cooked as directed), green olives, 1 can chop tomatoes with oregano/basil/garlic, fresh basil. 

Cook rice. Mix in other ingredients and then serve as is or
Serve over chop salad ---can use tortilla chips on top if desired

ps. I like cooking 1cup Basmati rice with about 2 1/2 cups water for 55 minutes--depends on the brand you use. I find it is easier to digest, but you don't want it mushy either

GF , oil free, banana blueberry oat pancakes






Note: I blended Bob's gluten free oats to make 1 cup of oatflour

1 cup of GF oat flour
¾ cup almond milk
1 mashed ripe banana
½ cups blueberries
1/2 teaspoons baking powder 
A bit of vanilla 
Combine first 3 ingredients. Fold in blueberries. Cook on medium 2 min each side (or a bit less actually)/ Makes 6 pancakes.

Tater Tot Casserole




INGREDIENTS
  • 1 pound ground beef (or 1 pound ground tofu)
  • 1 10 ounce can cream of mushroom soup
  • 1 10 ounce of frozen baby peas
  • 1 32 ounce bag of tater tots
  • 2 cups of cheddar cheese
  • 1 white onion
  • ½ tablespoon garlic powder
PREPARATION
  1. Preheat your oven to 350∞ F.
  2. Cook your ground beef in a large saucepan on medium heat for 6 minutes.(or make ground Tofu https://nannykimsrecipes.blogspot.com/2014/10/ground-tofu-filling.html
  3. Dice your white onion and add it to your beef. Cook for 6 more minutes or until the beef has browned and is cooked all the way through.
  4. Strain out excess fat from your saucepan.
  5. Mix ground Tofu, cream of mushroom soup, cooked onions, peas and garlic powder in large bowl and then spread in 13 by 9 casserole.
  6. Sprinkle cheddar cheese across the top of the casserole so that it forms an even layer on top of your ingredients.
  7. Add tater tots on top of the layer of cheese. Make sure you arrange them evenly, covering the entire casserole because this is going to be your crust. It is also helpful for serving purposes to arrange the tater tots in an even grid.
  8. Place dish in the oven and bake for 50 minutes, or until the tater tots begin to turn golden brown.
  9. Let cool and enjoy

I like the addition of corn, string beans and peas and sage and thyme and extra mushrooms. A bit of red wine vinegar too. Beef broth is nice too if not vegetarian.

Lentil sloppy joe in nice sauce

I really like it but I doubled the CUMIN and eliminated the CHILI since I can't do chili. I used red bell pepper since I didn't have a green one.

Slaw is good with this!

The ingredients I will list and go to the link for directions:


Dry Lentils Ingredients:
  • ¾ cup dry small brown lentils, picked through and rinsed *
  • 1 cup water
  • 2 cup vegetable broth*
  • 3 Tablespoontomato sauce
Sloppy Joes Ingredients:
  • 1 medium yellow onion, small dice
  • 1 green bell pepper, small dice
  • 1 celery rib, small dice
  • 2 Tablespoongarlic, finely minced
  • 1 cup tomato sauce
  • ¼ cup water
  • 1 Tablespoon tamari *
  • ½ teaspoon liquid smoke
  • 2 teaspoonapple cider vinegar
  • 3 Tablespoons + 1 teaspoon organic maple syrup
  • 1 Tablespoon molasses
Sloppy Joes Seasonings/Spices:
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 2 Tablespoon dried minced onion flakes
  • ½ teaspoon sweet paprika
  • 1 ½ teaspoonsmoked paprika
  • ¼ teaspoon cumin [ME DOUBLE]
  • 2 teaspoonchili powder [ME ELIMINATE]
  • ½ teaspoon ground mustard
  • 1 teaspoon sea salt(+/-) *
  • ¼ teaspoon black pepper

Basmati Rice Salad

Ingredients

Me--parsley and pine nuts are also good added to this

Rice:
  • 2 cups uncooked basmati rice (which will yield 5 to 6 cups cooked rice)
  • 3 cups water (or more, depending on the package instructions)
  • 1/2 teaspoon salt
  • 2 2-inch strips of fresh lemon zest (use a vegetable peeler to take just the zest, not the whole peel, off of a fresh lemon)
Mix-ins:
  •  2 cups of frozen peas (I just mix them in the hot rice once rice is done-cools the
  •     rice faster and thaws the peas.

  • 1/4 cup golden raisins or currants, plumped in enough water to cover the raisins for 5 to 10 minutes, then drained (if your are dried out too much!)
  • 1/2 cup minced green onions, including the greens (about 2 green onions)
  • 1 1/2 teaspoons finely grated lemon zest (lime is an alternative)
  • 1 teaspoon finely minced fresh mint leaves (spearmint)
  • 2 Tbsp lemon juice (lime is an alternative)
  • 1/4 cup olive oil
  • 1/2 teaspoon salt
Optional---if you don't have lemon, a good sub is Italian dressing--mix to  taste. Parsley and pine nuts

GF waffles/ made with rice flour and GF oats

Instructions

  1. In a small bowl beat egg whites until stiffly beaten, set aside.



    In another bowl beat together the canola oil, milk and egg yolks.



    In another bowl blend together the quick oats, rice flour, baking powder, baking soda, sugar (optional) and salt. Add oil/egg yolk mixture to flour mixture, blend and let stand for 5 minutes. Fold in some of the beaten egg whites; fold in rest of beaten egg whites.



    Cook on medium-hot griddle, that has been sprayed with nonstick spray, until bubbles are well-formed around edges of pancakes; turn and cook other side. Or bake in waffle iron. Reheat waffle iron before putting another waffle in each time.

Summer rolls





Found these wrappers at Publix and they are easy to work with--Don't laugh at my efforts--I used some left over Vietnamese rice noodle salad in some of these. In some I used carrots, cukes, avacado, basil, onion, carrots.  I also made a peanut sauce with peanut butter, a GF tamari sauce , and a drop of Sesame oil, and water. Ginger slices too.
