cottage cheese pancakes (Keto like)


 Nice with fruit if you aren't using syrup.

2 eggs separated into whites and yolks
1/2 cup cottage cheese
butter for pan

Heat pan to about medium or level 3 on my stove. Beat egg whites until stiff and won't fall out of bowl if turned upside down.  In separate bowl mix yolks thoroughly with cottage cheese.  Fold yolk mixture into the stiff whites.  

Cook in a buttered pan for about 3 minutes on a side with the pan covered. Reduce heat if needed.
