Ingredients
- 1 pound chicken breasts chopped
- 1 teaspoon olive oil
- 2 bell peppers, seeded and chopped
- 1 red onion, peeled and chopped
- 4 cloves garlic, minced
- 15 ounces black beans (drained)
- 15 ounces fire roasted diced tomatoes
- 8 cups chicken broth
- 1 fajita seasoning packet or taco seasoning
- 1 and 1/2 cups cooked rice— optional— however much you want
I used an orange bell pepper as I was out. I also added a small summer squash.
Sauté the onions, peppers, and garlic about 5 minutes. Add all but the cooked rice. Cook everything about 20 minutes or until all is tender. Add rice at end. Note: I added the summer squash during the last ten minutes chopping really small.
