Waffle keto


 Good and oh so satisfying. Makes 3 large waffles,


4 large eggs

4 ounces cream cheese ( 1/2 block softened)

1/2 cup almond flour

2 tablespoons melted butter

1 teaspoon vanilla ( which I forgot)

1 teaspoon baking powder 


Blend in food processor. I blended the cream cheese then added the rest to the food processor. Cook in waffle maker.

I served mine with fresh raspberries!

Chicken bread





 Super easy!! Nice for a change up. I cut mine in half and topped with cheese and arugula an a bit of primal avocado mayo.


IN food processor mix :
1 egg
5 ounces of chicken
1 teaspoon baking powder

grease pan

Cook in Air fryer 10-15 minutes at 350. I preheated mine and it took shorter than the 15 so I kept checking.  Note.--the bread pan is the individual size---very small.

Chili atop mashed cauliflower


 Just wanted to remind myself to serve my meat chili this way on top of mashed cauliflower.

Chili made with ground meat (16 ounces), a can of fire roasted diced tomatoes, sugar free ketsup ( few tablespoons), some chopped onion, chopped red bell( few pieces), 4 garlic cloves, chili powder, cumin, oregano, 1 tablespoon Worcestershire sauce, a tablespoon green chilies ( canned), salt and pepper.

Almond bread cake (keto substitute for cornbread)


 Nice with Chili, or soup, or a snack with tea.

1 cup almond flour

4 tablespoons butter (melted)

1/4 cup half and half

1 teaspoon baking powder 

1/2 teaspoon salt

2 beaten eggs


Preheat oven 375. Grease an 8 inch round pan.

Mix flour, melted butter, half and half, baking powder and salt.

Add beaten eggs. Place in greased 8 inch pan. Bake 21 minutes until golden brown and toothpick clean.

Cottage cheese bread




FINALLY!! I have been doing keto and was getting sick of almond bread and coconut flour bread. 
This is a nice version for sandwiches.  I did have a problem with the bottom sticking so next time I will try spraying the parchment paper.  I also had to turn the oven higher near the end.

This is what the recipe calls for:

1 cup cottage cheese (better 4 percent fat)
3 large eggs (separated)
1/4 teaspoon cream of tartar
1/2 teaspoon garlic powder (optional)
1/2 teaspoon onion powder (optional and I forgot)
1/4 teaspoon salt
Black pepper--I just sprinkled some in.
Optional other herbs
parchment paper or cooking spray (I recommend both!)

Preheat 300 F (I had to turn up higher near the end)

Separate the egg whites into a separate bowl. Add the cream of tartar to this bowl and whip about 3-5 minutes or until soft peaks form.

In second bowl blend cottage cheese, egg yolks and seasonings--you could do this in a food processor to get it smoother.

Last of all fold the egg whites into the cottage cheese batter carefully---just mixing.

Line a baking sheet with parchment paper (and I advise a bit of cooking spray as mine still stuck a bit to the paper----next time I will try both).

You can pour batter into a large rectangle shape or do circular biscuit like shapes.  Cook 30 minutes or more until golden and firm to touch. NOTE---I did a rectangular shape and mine took a lot longer. I ended up turning up the heat.

Let cool 5 minutes, and lifting the parchment, transfer to a wire rack. After cooling on the rack, I ended up flipping mine over after it had cooled a while to make parchment removal easier.

I cut mine into 8 smaller rectangle shapes and used 2 each for sandwiches.

Pumpkin yogurt


 I just wanted a hint of pumpkin. Nice for a flavor change.

1/2 cup Greek yogurt  (or Me home made Dr. Bill Davis's yogurt)

1 tablespoon of pumpkin puree (the unsweetened kind)

1/4 to 1/2 teaspoon of vanilla extract

cinnamon sprinkled to taste

(I didn't use any sweetener)


Blend and eat

Pizza crust gf keto


 Good by itself just as a snack….. Makes good crackers also if you cook it crisp enough! If using cut up as crackers instead of as a pizza crust , it is great dipped in keto type marinara sauce!!

1 cup shredded or chopped mozzarella 

1/4 cup almond flour

1 egg

Garlic powder and Italian seasoning- sprinkled

Bake 15-20 minutes at 350 F

I did my mixing in a small food processor 

You just roll it between parchment paper and then bake.


Pizza # 2


This is different from the first pizza crust… this is trickier in the cooking method,

1 cup cottage cheese 

2 large eggs

1/8 cup Parmesan cheese ( shredded)

1 teaspoon garlic powder 

Some Italian seasoning.(as much as desired—I just sprinkle some.


Preheat oven 400F

Mix the ingredients in a food processor and pour on a parchment lined baking tray. (Mine was a rectangle).Bake 10-15 minutes then lightly cover any part that has turned a dark brown with some foil. Continue cooking checking every 5 minutes and covering any dark brown sections. You cook until all sections have gotten brown. Mine took about 30 minutes. The recipe called for 40, but that would be too long for mine.es 

Take out of oven and let cool about 10 minutes. You can refrigerate and use the crust for later or after the ten minutes put your sauce, veggies and mozzarella on top.

I used about 2 ounces of mozzarella. I placed sauce , mozzarella, purple onions, red bell, and black olives. You place back in the oven and cook about 10 minutes until cheese melts.


For the sauce:

1 eight ounce can tomato sauce 

1/4 tsp Worcestershire sauce 

1/4 teaspoons oregano 

1/4 teaspoon onion powder 

1/4 teaspoon garlic powder 

Mix ahead for the sauce so the flavors have a chance to blend nicely. I probably used 2/3 of the sauce.

Pecan sandies keto


 So nice because of the buttery flavor. Note: I made these without any sugar or sweetener.

 So optional --you can add 1/4 cup of sugar or whatever is your choice. I don't need it ;-).


1 cup Almond flour
1/2 cup pecans, finely chopped
1/4 cup butter softened (4 tab)
1 large egg
1 teaspoon vanilla extract
1/2 teaspoon baking powder (I used a grain free version)

Preheat oven to 350F

Line a baking pan with parchment paper

Mix egg, softened butter, and vanilla 

In a separate bowl mix flour, baking powder , salt and then nuts.

Gradually add the dry ingredients to the wet.

Make tablespoon sized cookies (makes 10).  Bake about 10-11 minutes until firm.
1/4 teaspoon salt

Sardines, canned air fried

The above photo is the way I prefer them. These were the smoked flavored ones packed olive oil. I drained the oil and just dipped them in about a tablespoon of almond meal. Then I air fried them. These came out much better than the ones pictured below that used egg dip and tapioca flour.

I wanted to try a more palatable way of having sardines and this worked. 
I used the oil packed smoked ones from Wild Planet so I didn’t have to season them. I halved this recipe, using only one can. I used a little bit of tapioca flour about 1 and 1/2 teaspoons to make it gf and reduce the carbs. Note: the change I made above.


 
But as I said above I prefer using just almond flour for the dip. I cooked mine about 8 minutes.

Mug bread keto


Easy 90 second mug bread/ great for breakfast. I have made this 3 times. The first two times came out great , but the third time came out soggy.  Why??? I have no idea.  

1 tablespoon melted butter

1 tablespoon coconut flour OR almond flour

1/2 teaspoon baking powder ( I use non cornstarch kind)

Salt- pinch

1 egg


Melt butter in your mug. Add the rest of the ingredients mixing well-  and microwave 90 seconds ( in the normal powered microwave).

Let sit a minute. Then just slide it out using a butter knife to loosen edges. Serve however you desire. 

If you don’t like a coconut taste use almond flour (almond has less carbs)

Zucchini roll ups keto (air fryer)


 S0 tasty

1/2 cup cooked shredded Chicken
1 medium Zucchini (I only used about 1/2)
1/2 cup keto friendly pasta Sauce divided
1/4 cup shredded Mozzarella cheese plus a tablespoon extra for topping
1/4 cup cottage cheese

Slice the zucchini very thinly lengthwise using mandolin or vegetable peeler

Make filling: Mix 1/2 of the pasta sauce, , the chicken, mozzarella, and cottage cheese

Assemble rolls;
   Place two zucchini strips side by side overlapping a bit. Place a spoonful of the filling on just one end and then roll to make a roll up.

Preheat air fryer to 330. In oven safe dish or lined air fryer basket place the rolls. Top with other 1/2 of pasta and a sprinkling of mozzarella.  

Air fry 10 minutes until cheese is melted and golden.

Chicken, whole air fryer


 Delicious! I found this googling with AI 🤣

1 whole chicken (around 3.7-giblets removed and PATTED DRY)

1 tablespoon olive oil

1 teaspoon salt

1 teaspoon garlic powder

1/2 teaspoon paprika

1/2 teaspoon black pepper

1/4 teaspoon thyme


Preheat air fryer to 360.

Mix seasonings with oil in small bow.

Remove giblets, pat chicken dry. Rub seasoning all over.

Place chicken in preheated air fryer with BREAST side down. Cook 360 28 minutes. Then flip using tongs. Cook another 10-12 minutes OR until the internal temperature of the thickest part of breast gets to 165.  Let it sit a bit while taking the temp as it sometimes with rise. 

Let rest 10 minutes before serving--helps with juices and tenderness.

Tofu paprika air fry


 Easy! 

14 ounce block of firm or extra firm tofu

1 tablespoon tamari or soy sauce 

1 tablespoon garlic powder 

1 tablespoon onion powder 

1 tablespoon paprika 

Sprinkle some smoked paprika 


Chop tofu in squares. Mix with ingredients in a bowl.

Preheat air fryer for a couple minutes 375F

Place in parchment lined air fryer. Bake 10-12 minutes shaking 1/2 way. Cook until desired crispness.

Good in wraps or in a creamy broccoli sauce served with pasta or zucchini noodles.

Lasagna keto


My sister sent me a recipe for keto lasagna— easy and good.


I changed it up a bit not using as much cheese 

 

1 pound ground beef
1 pound  ground pork sausage mild Italian 
3-4 eggs to make egg wraps ( or purchase them)
1 egg for mixing into the ricotta 
2.5 cups mozzarella 
2 cups low sugar marinara 
1/2 cup chopped onion
2 cloves garlic
15 ounces ricotta 
1 teaspoon Italian seasoning

Preheat oven 350F

Brown both beef and pork in a large skillet with the onion adding garlic at the last minute or two of the sautéing.

Make your egg wraps as the meat is cooking ( google recipe- I used whole eggs- one egg for each wrap). Or buy them.

In a bowl mix 1 raw egg with the ricotta adding 1 teaspoon Italian seasoning, ( and 1/2 teaspoon black pepper if desired)and a teaspoon salt

In 13x9 inch baking pan place half the meat. Place 1/2 of the wraps spread as evenly as you can— you can make strips of them or whatever.  Cover with 1/2 the ricotta mixture, top with 1/2 the mozzarella.

Next place the rest of the meat, the egg wrap layer, the ricotta and then the mozzarella.

Bake 20 minutes then up the oven to 425 letting the top brown— about 5 more minutes.

Makes about 8 servings

Lemon muffins keto type gf


Tried these today without the added 1/4 cup of sweetener. Next time might add the small blueberries instead of the huge ones I had. 🤣 Would be better with sweetener , but I am trying to avoid that. I spread a little cottage cheese/ like cream cheese on mine.

3 large eggs

1 tablespoon lemon zest ( next time use more)

1/4 cup coconut flour 

1/4 cup almond flour

1/2 teaspoon baking powder ( I used grain free)

Pinch of salt

1/4 cup melted butter

1/3 cup small kind of blueberries ( the small would work better than the giant ones I had)

Optional 1/4 cup of sweetener - would be better with this addition- but I am avoiding.


Preheat: 350F

Mix eggs. Add the rest, adding blueberries last. Divide into 5 regular sized muffin things.

Cook about 20 minutes— next time I would do a bit less than the 20.

Coconut flour bread keto


Simple ingredients, GF, keto, rich tasting

1/2 cup coconut flour

1 stick of butter 

6 large eggs

1 teaspoon baking powder ( I used grain free no cornstarch)

1/4 teaspoon pink Himalayan salt)

Optional spices if desired(garlic powder, onion powder, even rosemary— whatever— here is a link to a recipe that uses them : https://www.ketoconnect.net/coconut-flour-bread/   )

Preheat oven 350F

Combine dry ingredients 

In separate bowl mix eggs with hand mixer until bubbles  at top.

Melt butter and add to eggs slowly while beating so the butter doesn’t cook the eggs.

Next, slowly add the dry ingredient mixture to the egg mixture all the while beating. 

Pour into a greased 8x4 loaf pan and cook 40-50 minutes. Mine usually takes 40-41 minutes.

Rest on wire rack 10 minutes before removing from pan.

Salmon keto


 So good. I cooked mine on the griddled from Cuisinart. 400 degrees on griddle setting. Only took minutes to reach internal temperature of 145. However, now I need to throw out my Cuisinart because I just realized it has Teflon lol.

Pictured below cook in air fryer 



For 1 serving:

One 6 ounce skinless (or with skin) salmon 

For marinade;

3/4 tablespoon olive oil

1/2 tablespoons gf soy sauce

1/2 tablespoon lemon juice 

A bit less than 1/4 teaspoon ginger powder 

Pinch garlic powder 

Pinch cumin powder 

Pinch black pepper 

Divide marinade in half.

Marinate fish with brushing both sides using 1/2 your marinade. Let it sit 30 minutes in fridge.

Cook as above. Serve with other half of marinade.

Air fryer: preheat 370. Cook 10-12 minutes or until flakes easily (skin side down).


Baking powder grain free


 Mix together- makes 1/4 cup. Keeps about 6 months in sealed container 

Pancakes keto/ gf


 Very tasty

3/4 cup almond flour

1/2 cup cottage cheese 

2 large eggs

1 tablespoon melted butter 

1 teaspoon vanilla 

1 teaspoon grain free baking powder **

Pinch salt

Oil for frying if needed 


Mix all ingredients ( except additional oil for frying) in a blender or food processor including the melted butter.

Cook as usual. Makes 3 large pancakes or 6 smaller.

You cook about 2 minutes per side depending on.


To make 1/4 cup of grain free baking powder to have on hand use the following recipe, but only use the amount called for for the recipe 🤣
