Nice way to use cannellini beans. I cooked too much pasta so I added some marinara sauce to it 🤣/ I like it this way. Ingredients
- 8.8 oz (250 g) pasta
- 3 tablespoons olive oil, divided ( me omit )
- 2 cans (14 oz/ 400 g) cannellini beans ( I used one and just mashed it thoroughly with a potato masher in the pan)
- 2 medium red onions, diced (I only used part of a large one since I used only one can of beans)
- 2 large garlic cloves, chopped
- 1/4 teaspoon red chili flakes (me just a bit)
- 1 tablespoon fresh thyme, finely chopped
- 2 cups baby spinach
- 1/2 cup sundried tomatoes, chopped (didn’t have any so-sautéd some cherry tomatoes with the purple onions).
- 1/2 cup roasted red pepper, chopped
- Salt and pepper to taste
