cottage cheese chocolate mug cake


 I really love this.

1 egg
1/3 cup cottage cheese (I used 4% Good culture)
3 tablespoons cocoa powder (unsweet)
2 tablespoons allulose powder

Added after mixing the above 1 tablespoon chocolate chips

Mix thoroughly the first 4 ingredients. 

Grease a mug or small bowl

Place batter in mug. Place chips on top. Microwave 90 seconds. Let cool for some minutes before eating. Also very good cooled in Frig.

cottage cheese pancakes (Keto like)


 Nice with fruit if you aren't using syrup.

2 eggs separated into whites and yolks
1/2 cup cottage cheese
butter for pan

Heat pan to about medium or level 3 on my stove. Beat egg whites until stiff and won't fall out of bowl if turned upside down.  In separate bowl mix yolks thoroughly with cottage cheese.  Fold yolk mixture into the stiff whites.  

Cook in a buttered pan for about 3 minutes on a side with the pan covered. Reduce heat if needed.

sardines in scrambled eggs


 I was surprised! I do like sardines this way. This makes 1-2 servings depending on your appetite.


Oil for the pan
1/2 medium onion (I probably used 1/3)
2 cloves minced garlic
1 can sardines drained
2-3 tablespoons of salsa (or more if you like)
3 eggs , beaten with a tablespoon of water


Heat oil and saute onions and garlic until onions are translucent.
Add the drained sardines and the salsa. Break up sardines and heat for 1-2 minutes until hot 
Add the egg mixture. Cook until eggs are the way you like them. 

You can serve with extra salsa if desired.

Meat loaf low carb crockpot


 

I love this. It is lower in carbs and GF

1 pound of ground beef (or a ground beef,liver, heart mixture)
1 egg
1/2 cup pork rinds crushed
dried onion flakes (as much as you desire)
salt and pepper
1/4 cup cheddar cheese (or more if desired.  Could also add some parmesan if desired)

Mix all the ingredients well. Form into a loaf and cook on low in the crockpot for 8 hours. Act mine cooks much faster- about 4 hours on low, maybe less. I now check with a thermometer.

Cottage cheese oatmeal cookies


 Nice treat for me -

1 cup cottage cheese (I use Good Culture 4%)
1/3 cup allulose powder or sweetener of choice
1 egg
1 teaspoon vanilla
1 cup whole rolled oats (organic GF) OR optional 1&1/4 cup for thicker cookie
1 teaspoon baking powder
1/2 cup almond flour 
1/2 teaspoon of cinnamon
1/4 cup dark chocolate chips 

Mix throughly all ingredients except the chips. Next add chips.

Preheat oven 350 F.

Spoon out on parchment lined pan into 12 cookies. Bake 20-22 minutes until golden brown. I used an air bake sheet.

You have to let these cool a bit before serving. Refrigerate leftovers.
