lamb air fry bone in chops


 Tasty. I sprinkled rosemary, garlic and salt before cooking. I used the thermometer to test each piece while cooking. I did not rub mine with oil. Just dried them then seasoned them.

Google directions I used :

air fry bone-in lamb loin chops, 
preheat your air fryer to 400°F (200°C) and cook for 8 to 12 minutes, flipping the chops halfway through. The exact cooking time depends on the chops' thickness and your desired doneness. Using an instant-read meat thermometer is the most reliable way to check the internal temperature. 
Air fryer instructions
  1. Prepare the lamb chops. Remove the chops from their packaging and pat them dry with a paper towel to remove excess moisture. This helps the chops achieve a good sear.
  2. Season the meat. Rub the lamb chops with olive oil and your preferred seasonings. Popular options include kosher salt, black pepper, garlic powder, and fresh or dried rosemary and thyme.
  3. Marinate (optional). For enhanced flavor, you can marinate the chops at room temperature for 15 to 30 minutes, or in the refrigerator for up to a few hours.
  4. Preheat the air fryer. Set your air fryer to 400°F (200°C) and let it preheat for about 5 minutes.
  5. Arrange the chops. Place the lamb loin chops in the air fryer basket in a single, even layer. Do not overcrowd the basket, as air needs to circulate for proper cooking.
  6. Cook. Air fry for 8 to 12 minutes, flipping the chops once halfway through the cooking time.
  7. Check for doneness. Use a meat thermometer to check the internal temperature by inserting it into the thickest part of the meat without touching the bone.
    • Medium-rare: 125–135°F (52–57°C)
    • Medium: 140–145°F (60–63°C)
    • Medium-well to well-done:145°F (63°C) and higher
  8. Rest the meat. Once the chops reach your desired temperature, transfer them to a plate and let them rest for at least 5 minutes before serving. This allows the juices to redistribute for a more tender and juicy result.

Chocolate keto crêpe

For the crepe:

2 eggs 

2 tablespoons cocoa powder (unsweet)

1 Tablespoon sweetener (I just used a teaspoon of allulose because I added strawberries to the filling.


Filling:

2 tab of ricotta or cottage cheese (I like some sour cream in the mix too)

vanilla to taste

optional : 1 teas sweetener

               Me: some sliced strawberries

waffle keto quick


Quick easy!! Makes 1 waffle— just 2 ingredients 

1 heaping tablespoon of peanut butter

1 egg

Mix well and cook. I had unsalted peanut butter so it did need some salt.

Carrot mug cake



Note: it really needs more sweetener than I give it— I am trying to cut back on my sweet tooth . I actually like this with just 2 tablespoons of coconut flor no almond flour.

Ingredients 
1 tablespoon butter

1 tablespoon almond flour ( or coconut flour)

1 tablespoon coconut flour

1/2 teaspoon baking powder 

3/4 teaspoon pumpkin pie spice( or close to 1 teaspoon is nice)

1 egg

1 teaspoon vanilla 

1/2 -1 teaspoon allulose powder ( or more depending on desire) or sweetener of your choice- more would be better.Better with 1 tablespoon of allulose!

2-3 tablespoons 1/2 and 1/2 (or milk of choice)

1 tablespoon grated carrots 

( ( for topping afterwords cream cheese and coconut flakes or whipped cream)

Melt butter in mug. Then mix rest of cake ingredients folding in carrots last. Microwave 50-60 minutes ( carefully checking until desired doneness).mine was better at 69 minutes 

Top with whatever- sour cream mixed with vanilla makes a nice topping.

Note: raisins would be a nice addition

Zucchini hamburger casserole

But I only had cheddar so I just used about 100grams . I used a can of fire roasted tomatoes, 1 pound of hamburger, 1 large onion, some garlic cloves, 1 teaspoon Italian seasoning, one good sized zucchini.

I cooked onion and meat and garlic in the iron skillet- 5-8 minutes. Added tomatoes and diced zucchini and seasoning. Cooked another 5 or until squash started getting tender.

Sprinkled cheese on top and transferred the skillet to the oven cooking 30 minutes at 375

Note: Would be good served over mashed cauliflower

Cottage cheese pumpkin breakfast


 Used this spice from target plus some cinnamon 

Nice fall dish for Breakfast or whatever

What I used:

1 cup of Nancy's probiotic cottage cheese (organic 4 Percent from whole foods)
1 egg
3 tablespoons unsweetened pumpkin puree
*pumpkin pie spice (I just put about 1/4 -1/2 teaspoon, I think) and I added some cinnamon
1/8 teaspoon vanilla
(me-no sweetener--but you could add some)

* some like 1-2 teaspoons of the pumpkin pie spice--I used less but added cinnamon. Then I sprinkled more pumpkin pie spice after cooking.

Blend ingredients well in food processor. Pour in dish (I didn't grease) My dish was the 6 inch round one and some people use a smaller size. My oven seems to cook slower than a lot of folks. Many people cook theirs 20 minutes , but mine needed longer.

Bake in 350 F for 20-30 minutes depending on the size of your dish. You want the center a bit jiggly so it doesn't come out dry. 

Mine came out very creamy--but the brand of cottage cheese makes a difference. You can serve warm or refrigerate first.

When serving you can top with added spices, and/or yogurt or whipped cream if desired.

Chickpea roasted air fryer


 Easy

Preheat air fryer to 390 F

Take 1 can chickpeas and drain and rinse.

Place in a bowl and mix with a spritz of olive oil, salt, paprika, onion powder, garlic powder or whatever you want.

Place in air fryer and cook about 12-15 minutes shaking a few times during the cooking process. Check near ten minutes , but continue cooking  until your desired crispness. 


Squash/ yellow summer chips


 Really good. I did these in the air fryer (preheated at 375) . After preheating, I cooked for between eight and 10 minutes.

I sliced up the yellow Summer squash and sprinkled salt, onion powder, garlic powder, and paprika and a little olive oil

Fudge cottage cheese


 I really like this.creamy and hits the spot for chocolate cravings.

1cup full fat cottage cheese 

1/3 cup dark chocolate chips

1 tablespoon coconut oil

1 teaspoon vanilla extract ( of course I forgot)

Blend cottage cheese in food processor. 

Melt coconut oil with chips in microwave.

Blend the cottage cheese in food processor  then mix this with vanilla and melted chocolate chips and melted coconut oil; next put in parchment lined dish ( I used 5x6 pan. Freeze 30 minutes. Then put in refrigerator for remaining days that you have leftovers.
