Makes about 6 pancakes. So good!!! When served with whipping cream they taste like cream puffs!

These cooked up fine in my iron skillet with a bit of butter in the pan. You do need a cover.
Mine cooked faster than hers. Mine were about 5 minutes on one side, and about 3 on the other side.
Here are the ingredients for about 1 serving of 6 pancakes.
3 eggs separated into whites, and yolks
1 tablespoon of unflavored Gelatin
2 and 1/2 tablespoons of collagen (or one packet of the above if you buy packet kind)
Separate your whites/yolks
Beat egg whites slowly while adding the gelatin (I accidentally added the collagen too, it still was fine).
Beat for about 5 minutes until the whites get stiff enough that you can turn the bowl upside down and they don't fall out.
Next add the collagen to your yolks (as long as you didn't do my mistake) beating well.
Then carefully fold the white mixture into the yolk mixture.
IN preheated skillet add a bit of oil of choice--I just used butter. Scoop out between 1/4 to 1/3 cup for each
pancake. ME: cook 5 minutes COVERED on one side, flip and cook about 3 minutes Covered on the other side.
Serve with whipped cream or whatever.
