Almond flour biscuits 2


Easy. Quite tasty. 

Preheat oven 350F

1/4 cup plain yogurt or sour cream

1 egg

1/4 teaspoon salt

1 cup almond flour

2 teaspoons baking powder ( I used a grain free one- no cornstarch.


Preheat oven to 350F

Mix egg , salt, and yogurt 

Add almond flour and baking powder mixing it in with silicone spatula. It should be fairly thick- if not add 2 more tablespoons of the flour. 

Place on parchment lined baking sheet- making 6 biscuits (about 2 good tablespoons each). Leave them in the scooped position, don’t pat down. 

Cook about 15 minutes to 17. Mine took 15. Don’t overcook.

Granola no grains unsweetened


 Quite good, fast and easy. Makes 3 cups cooked.


Preheat oven to 350

1 cup raw cashews, chopped or pieces
1 cup raw pumpkin seeds, without shell
1 cup slivered almonds
1 teaspoon chia seeds
2 teaspoons ground cinnamon
2 tablespoons coconut oil or walnut oil, or extra light olive oil. I used coconut
1 teaspoon vanilla

3/4 cup unsweet coconut flakes or shredded (you add these after the first 10 minutes of cooking)


In a large bowl mix the cashews, pumpkin seeds, almonds, chia , cinnamon, oil, and vanilla.

Spread in a parchment lined pan. Place in preheated oven 350 F. Bake 10 minutes.

Remove from oven and add the coconut, mixing in thoroughly.   Bake another 10 minutes.

Trail-Mix muffins


 Grain free if you use grain free baking powder. Nice for a change up snack.

1 large apple cored
1 large carrot peeled
2 eggs (large)
1/4 cup extra virgin olive oil
1-2 tablespoons of maple syrup
2 cups almond flour
1 teaspoon baking soda
1/2 teas baking powder
2 tablespoons ground flaxseed (I use golden)
1 teaspoon ground cinnamon
1/4 teaspoon salt
1/3 cup pumpkin seeds (raw and unsalted no shell)
1/3 cup raw sunflower seeds
1 tablespoon driend cranberries (up to 1/3 cup if you desire).


Preheat 350

Line 12 regular sized muffin tin with paper liners

In food processor with grater attachment grate apple and carrot

Change out the grater with regular attachment. Add back the grated apple and carrot. Add the eggs and pulse until combined.

Next add the oil, syrup, flour, baking soda and baking powder, flaxseed, cinnamon and salt. Blend till smooth.

By hand mix in seeds and dried fruit.

Place in muffin tin. Cook 23-28 depending. You want them golden and puffed up.

Cool. Store in frig in air tight container or freeze
