Apple Berry baked oatmeal pie

It is very tasty and gluten free if you use gluten free oats.  Very moist and yummy and full of fruit!

Ingredients: 
  • Canola oil cooking spray
  • 2 cups frozen mixed berries (i used frozen blueberries and some fresh strawberries)
  • 2 cups rolled oats
  • 1/2 cup chopped pecans (I used less--either way would be good)
  • 1 teaspoon baking powder
  • 1/2 teaspoon fine sea salt
  • 1 organic apple, peeled, cored and grated (about 1 cup)
  • 1 cup 2% reduced-fat milk (I used almond milk)
  • 1/2 cup nonfat vanilla yogurt (I used Greek plain yogurt but added vanilla and honey)
  • 1/3 cup maple syrup
  • 2 teaspoons vanilla extract
  • 1 egg plus 1 egg yolk
Method:

Preheat oven to 375°F. Oil a (9-inch) pie pan with cooking spray; set aside. In a large bowl, stir together berries, oats, pecans, baking powder, salt and apple. In a medium bowl, whisk together milk, yogurt, syrup, vanilla, egg and yolk; stir into oat mixture. Transfer to prepared pan and bake until firm and golden brown on top, about 50 minutes. Cut into slices and serve.

South Carolina slaw from June 2013 Southern Living



I really like this and the dijon adds some fire.

1/2 head thinly sliced cabbage (about 1 lb)
1 cup grated carrot
1/2 apple without skin chopped

{Place those three in a bowl}

Whisk together 1/2 cup apple cider vinegar (I used white wine vinegar)
1/4 cup sugar
1/4 cup oil
2 Tbsp dijon mustard
2 tsp dry mustard
1 tsp celery seeds
1 tsp kosher salt (I omit)
1/2 tsp black pepper

It says to bring these whisked ingredients to a boil until sugar dissolves and pour over the cabbage carrot mix and serve.

However , I altered some of the amounts on the whisked ingredients and I did not heat them. Honey can be used too instead of sugar--just experiment. I let it all sit in frig for a while. It was very tasty.

Another dressing:
3 tablespoons toasted sesame seeds 
2 tablespoons maple syrup 
2 tablespoons low sodium gf tamari 
Bit of water

pasta with fresh tomatoes



Cook your pasta and add fresh chopped tomatoes, parsley, basil and garlic. You can add a bit of olive oil and cheese if desired. Very tasty and an easy lunch or snack!
