mushroom swiss burger bowl

Nice keto type dish.  Good flavor, but I use regular sweet paprika instead of smoked.  I sometime mix mayo with ketchup and mustard instead of the Greek yogurt.  You can use whatever cheese you desire .  The recipe uses swiss.

egg/microwave delight for 1

 tasty-quick

1 egg
2 tablespoons of cottage cheese (I sometimes use a tad more)
1 tablespoon grated cheddar cheese or cheese of choice

I blend the egg and cottage cheese in a small serving bowl (I use an immersion blender right in the bowl)
Sprinkle with the cheddar. Microwave 30 seconds and then stir and microwave another 30 until done to your liking. Sprinkle with black pepper if desired.

Pizza casserole

Love this dish — you can also change this up and make a taco pie. Change the seasonings to taco seasoning and add a 1/2 cup of salsa instead of the pizza sauce. Do the rest the same and when serving you can top with lettuce, sour cream , avocado, tomatoes, whatever. You can also use some cheddar along with the mozzarella.

1 pound ground beef
1/2 cup pizza sauce or pasta sauce
1/2 to 1 cup mozzzarella cheese shredded
1 cup cottage cheese
1/4 cup grated parmesan cheese
pepperoni slices
1/2 tsp garlic powder
1/2 tsp onion powder
1 tsp Italian seasoning
a few shakes of oregano
1/4 teaspoon black pepper
Sliced olives optional

Preheat oven 375F

Brown ground beef. Drain off fat.  Mix in seasonings and pizza sauce. Place in a pie pan. Spread cottage cheese on top, and then top with the other cheeses and top with pepperoni  and bake for 20-25 minutes. I usually drain off more fat after the baking.

Note : you can also add a bit more sauce before the cottage cheese layer if desired.

Cabbage and ham toss

So tasty— cabbage is a nice substitute for pasta

Cabbage sliced in thin strips

Onion chopped

Half and half

chopped ham

Parmesan cheese

Garlic powder and salt and pepper

Olive oil and butter

Preheat oven 400 F

Toss sliced cabbage with a bit of olive oil and salt. Bake for 10-15 minutes just until it starts to brown.

Meanwhile sauté ham, and onions in a bit of butter until onion is to your liking. Add some garlic powder, black pepper, half and half , and Parmesan heating through. Toss with the cabbage.

Note— I got the idea from here: https://www.lowcarbspark.com/cabbage-carbonara/

That recipe uses bacon and full cream etc- it gives specific amounts so go there to get an idea.

Cauliflower and chicken peas roasted

I love this spicy dish. It uses yogurt mixed with 2 tablespoons of olive oil and a bunch of spices mixed into the cauliflower ( a whole head ). You place the chickpeas on the side apart with just a sprinkle of olive oil and salt and you roast in a 425 F oven for about 30 minutes.

They add rice when serving.
