Hits the spot in the Fall on a rainy day!! Love the flavors. This makes about 5 servings.
1 pound kielbasa sausage, sliced
1 medium onion, diced
3 cloves garlic, minced
4 cups cauliflower florets
4 cups chicken broth
1 cup heavy cream or half and half
1 teaspoon dried thyme
1 teaspoon smoked paprika
Salt and pepper to taste
1-2 tablespoons olive oil (I used a teaspoon or so bacon grease instead of the olive oil-/ adds nice flavor)
Optional 1 cup shredded cheddar cheese
Fresh parsley for garnish optional
Heat oil in large soup pot. Add onion and sauté about 5 minutes until translucent. Add sausage and garlic cooking 5-7 minutes or until meat is brown or whatever.
Stir in cauliflower florets and broth,thyme, smoked paprika Salt, salt and pepper. Bring to boil then simmer 15-20 minutes until cauliflower is tender. Stir in cream and serve. You can top with shredded cheese if desired.
