Nice treat for me -
1 cup cottage cheese (I use Good Culture 4%)
1/3 cup allulose powder or sweetener of choice
1 egg
1 teaspoon vanilla
1 cup whole rolled oats (organic GF)
1 teaspoon baking powder
1/2 cup almond flour
1/2 teaspoon of cinnamon
1/4 cup dark chocolate chips
Mix throughly all ingredients except the chips. Next add chips.
Preheat oven 350 F.
Spoon out on parchment lined pan into 12 cookies. Bake 20-22 minutes until golden brown. I used an air bake sheet.
