Sheet pan kebabs


 
Great tasting recipe found here- as you can see, I did not grate my onions, but it was still very good. For the ground meat, I happen to use a combination of ground beef, liver, and heart that is sold in the store and it was good with this recipe, but plain ground beef meat would be great too.

2 pounds ground meat

1 small onion grated 

3 garlic cloves minced 

1/4 cup fresh chopped dill( I used some dried, just less)

1/4 cup fresh chopped parsley ( had none)

Zest of 1/2 lemon 

Pinch of salt and pepper 

1 tablespoon cumin

1 tablespoon smoked paprika 

1 teaspoon coriander 

1/4 teaspoon cinnamon 

( for adding at the end of cooking a tablespoon of tomato sauce or paste)

Yogurt sauce:

3/4 cup Greek yogurt ( I used plain yogurt)

Juice of 1/2 lemon ( I just used lemon juice to taste)

1.5 tablespoons olive oil ( me less)

pinch salt and pepper 

Fresh parsley chopped (me none)

Fresh dill chopped ( used dried)

Dried mint ( my addition)

Original recipe called for teaspoon date syrup— me omit

You blend all the ingredients for the meat mixture. Press on a 13 x 9 pan ( I did this instead of sheet pan because of all the grease and because I made 1/2 the recipe.)You press to 1/4”-1/2” thickness . They have you score it vertically and horizontally but not all the way through.

Cook 20-22 minutes. Then I took a turkey baster to remove the grease.  You then take a tablespoon of tomato paste or sauce and brush the meat and broil for about 2 minutes. Finish scoring to the shapes you desire.

Serve with yogurt sauce.
