Red lentil soup/ Moroccan carrot

INGREDIENTS

  • 2 Tablespoons olive oil
  • 1/2 medium sweet onion, chopped
  • 3 garlic cloves, minced
  • 2 cups chopped carrots or about 4 medium carrots, peeled and chopped
  • 1 teaspoon cumin
  • 1 teaspoon turmeric
  • 2 teaspoon coriander
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cinnamon
  • 2 cups red lentils, rinsed until water runs clear **
  • 1-15 oz can diced tomatoes
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • Garnish:
  • Fresh cilantro or Italian parsley
  • Lemon wedges
  • **NOTE: on the red lentils. Some brands cook fast and I have had other brands take forever. Those brands might do better with a pre-soak time!

I cooked the onion till soft, then added the carrot and garlic simmering with some veg broth for about 15 minutes until carrots were soft. Then added seasonings, tomatoes, broth, and lentils cooking for 20 or so minutes until the lentils were nice and soft. Then I mashed it a bit with a potato type masher. Can add the lemon or lime juice and cilantro just before serving individually if desired.
